Upside-down Caramelised Banana Cake


Ingredients:

Topping:
½ cup butter, melted
1 cup brown sugar
4-5 bananas, peeled and halved lengthways

Cake:
1 cup butter, softened
1½ cups caster sugar
2 eggs, beaten
1 teaspoon vanilla extract
1 teaspoon cinnamon
2 cups plain flour
4 teaspoon baking powder
¾ cup milk




Preheat oven to 350˚F (175˚C).



Grease a 9 inch (23cm) round springform cake pan.

Mix melted butter with brown sugar and spread into base of cake pan. Cover with banana halves and set aside.

In a large bowl beat together butter and sugar. Add eggs, vanilla and cinnamon and combine well.

In a seperate bowl sift together flour and baking powder.

Mix in the dry ingredients alternately with the milk to the wet ingredients.

Pour the cake batter over bananas in the cake pan.

Bake for 90 minutes or until skewer comes out clean.

Remove from oven, loosen cake and invert on to a serving plate while still hot to avoid caramelised sugar sticking to cake pan.
