Plain Banana Cake

An excellent way to use those over ripened bananas! This delicious cake is full of flavor and perfect for the banana lover. Enjoy!


5oz (140g) butter
¾ cup caster sugar
2 eggs, lightly beaten
½ cup milk
1 teaspoon vanilla essence
2 cups plain flour
2 teaspoons baking powder
½ teaspoon baking soda
2-3 mashed ripe bananas

Preheat oven to 350˚F (175˚C).

Melt the butter gently in a small saucepan, then cool a little.

Add the sugar, eggs, milk and vanilla essence.

Sift the dry ingredients into a large bowl, then pour in the butter mixture.

Stir well while adding the mashed bananas - do not overmix or beat the batter!

Pour the cake batter into a lightly buttered 9 inch (23cm) round cake pan.

Bake for 30 minutes until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.

Lemon Icing
Try out this delicious lemon icing to compliment any banana baked treat!


1 ½ cups icing sugar
Strained juice of 1–2 lemons

Put the icing sugar in a bowl and add enough lemon juice to make it a barely pourable consistency.

Spread over the cooled cake and leave to set.
