Chocolate Ganache Frosting


Ingredients:


8oz (225g) bittersweet chocolate, finely cut
¾ cup heavy cream
1 tablespoon butter


Place the chocolate in a large heatproof bowl and set aside.

Heat the cream and butter in a medium sized saucepan and bring just to boil. 

Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes.

Stir until smooth. When the ganache has completely cooled, beat with a wire whisk until soft and fluffy.

The ganache can be used immediately, or it can be covered and refrigerated, then warmed prior to use.
