Blueberry Banana Cake

 

Ingredients:

¾ cup butter
1 cup sugar
1 cup brown sugar
3 eggs, beaten
1 teaspoon vanilla extract
1½ cups mashed ripe bananas
3 cups flour
1½ teaspoons baking soda
½ teaspoon salt
1 lemon, juiced
1½ cups milk
2 cups blueberries

 

Preheat the oven to 325°F (165°C).


In a large bowl cream the butter with the sugars.

Add the eggs, vanilla and bananas and mix well.

In a seperate bowl sift together flour, baking soda and salt.

Add the dry ingredients gradually to the wet ingredients and stir until combined.

In a large measuring cup, mix the lemon juice with the milk.

Gradually pour the milk into the cake batter and mix until smooth.

Fold in the blueberries.

Pour the batter into a greased 9 x 13 inch (23 x 33cm) loaf pan.

Bake for 1 hour and 15 minutes or until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.
