Banana Spice Cake

 

Ingredients:

2½ cups plain flour
1⅔ cups sugar
1¼ teaspoons baking powder
1¼ teaspoons baking soda
1 teaspoon salt
1½ teaspoons cinnamon
¾ teaspoon nutmeg
½ teaspoon ground cloves
⅔ cup vegetable shortening
2 eggs, beaten
⅔ cup milk
1¼ cups mashed ripe bananas

 

Preheat oven to 350˚F (175˚C).


In a large bowl, sift together flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg and cloves.

In a seperate bowl, mix together shortening, eggs, milk and mashed bananas until well combined.

Add the dry ingredients gradually to the wet ingredients and stir until combined.

Pour the cake batter evenly into 2 greased 9 inch (23cm) round cake pans.

Bake for 35 minutes or until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.
