Banana Raisin Bread



1½ cups raisins
2 cups boiling water
3 mashed ripe bananas
2 eggs
1½ teaspoons vanilla
⅓ cup corn oil
1½ cups plain flour
1 teaspoon baking soda
1 cup sugar
½ teaspoon salt

Preheat oven to 350˚F (175˚C).

Add raisins to boiling water and set aside for 15 minutes.

In a large bowl, add bananas, eggs, oil and vanilla and stir until well combined.

In a seperate bowl, sift together flour, baking soda, sugar and salt.

Add the dry ingredients slowly to the wet ingredients and stir until combined.

Remove raisins from water and dry with paper towels, then fold into the batter.

Pour the batter into a greased 8 x 4 inch (20 x 10cm) loaf pan.

Bake for 55-60 minutes or until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.
