Banana Pineapple Cake

A Hawaiian style banana bread with pineapple! Happy baking!


3 cups plain flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup chopped walnuts (or pecans, macadamia)
2 teaspoon vanilla
3 eggs, beaten
1¼ cups vegetable oil
2 cups mashed ripe bananas
1 (8oz) can of crushed pineapple, drained


Preheat oven to 350˚F (175˚C).

In a large bowl combine flour, sugar, baking soda, and cinnamon. Stir in walnuts.

In a seperate bowl combine vanilla, eggs, oil, bananas and pineapple until well combined.

Add the dry ingredients gradually to the wet ingredients and stir until combined.

Pour the cake batter evenly into 2 greased 8 x 4 inch (20 x 10cm) loaf pans.

Bake for 1 hour and 20 minutes or until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.
