Banana Pear Cake


1 can pears, drained
5 mashed ripe bananas
4 eggs
3 tablespoon butter
1 teaspoon vanilla essence
4 cups white wheat flour
½ cup sugar
1 tablespoon cinnamon
2½ cups brown sugar
1 teaspoon salt
1 teaspoon pumpkin pie spice
1½ teaspoon baking powder


Preheat oven to 350˚F (175˚C).

Pour the canned pears in a blender and puree completely.

Transfer pureed pears to a large bowl and mix in bananas, eggs, butter and vanilla essence.

In a seperate bowl, sift together flour, sugar, cinnamon, brown sugar, salt, pumpkin pie spice, and baking powder.

Add the dry ingredients slowly to the wet ingredients and stir until combined.

Pour the cake batter evenly into 2 greased 9 x 5 inch (23 x 13cm) loaf pans.

Bake for 55-60 minutes or until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.
