Banana Oatmeal Bread



Ingredients:

1¼ cup plain flour
½ cup brown sugar
½ teaspoon salt
½ teaspoon baking soda
¼ teaspoon baking powder
3 teaspoons canola oil
1 egg
2 egg whites
3 mashed ripe bananas
1 cup uncooked oats



Preheat oven to 350˚F (175˚C).


In a large bowl, sift flour, brown sugar, salt, baking soda and baking powder.

Add oil, eggs, bananas and oats to dry ingredients and mix well.

Pour the batter into a greased 8 x 4 inch (20 x 10cm) loaf pan.

Bake for 45-55 minutes or until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.
