Banana Lime Cake



¾ cup butter, softened
1½ cups sugar
3 eggs, beaten
1 tablespoon lime juice
1 teaspoon vanilla extract
2 mashed ripe bananas
1 teaspoon grated lime zest
2¼ cups plain flour
1 teaspoon baking soda
¼ teaspoon salt
¾ cup sour cream
⅓ cup shredded coconut (optional)


Preheat oven to 350˚F (175˚C).

Cream butter and sugar until light and fluffy.

Add eggs, lime juice, vanilla, bananas, lime zest and stir to just combine.

In a seperate bowl sift together flour, baking soda and salt.

Gradually add the dry ingredients and sour cream alternately to the wet ingredients and stir until combined.

Mix in coconut if you want that coconut texture and flavor!

Pour the cake batter into a greased 9 inch (23cm) round cake pan.

Bake for 45-55 minutes or until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.
