Banana Layer Cake

This simple Banana Layer Cake has a smooth moist texture and is absolutely delicious!


4oz (115g) butter
6oz (170g) sugar
2 eggs
1 cup mashed ripe bananas
1 teaspoon baking soda
2 tablespoons hot milk
8oz (225g) plain flour
1 teaspoon baking powder


Preheat oven to 350˚F (175˚C).

In a large bowl, cream butter and sugar until light and fluffy.

Add eggs one at a time, beating well after each addition.

Add mashed banana and mix thoroughly.

Stir soda into hot milk and add to creamed mixture.

In a seperate bowl, sift flour and baking powder.

Add the dry ingredients gradually to the wet ingredients and stir until well combined.

Pour the cake batter into 2 greased 8 inch (20cm) round cake pans.

Bake for 25 minutes or until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.

Fill with whipped cream and sliced banana or try a Cream Cheese Frosting filling for something extra decadent!
