Banana Fruit Cake

Try out this delicious Banana Fruit Cake recipe that cuts out the need for butter! It is made by soaking dried fruit in hot tea for extra moistness and sweetness.



1½ cups luxury dried fruit
1 cup hot black tea
grated zest of 1 orange
2 mashed ripe bananas
½ cup brown sugar
2 cups self-rising flour
1 teaspoon baking powder
1 teaspoon cinnamon
2 eggs, beaten


Preheat oven to 325˚F (165˚C).


Soak fruit and orange zest with hot tea in a large bowl for 4 hours.

Add bananas, sugar, flour, baking powder, cinnamon and eggs to the soaked fruits and mix together.

Pour the cake batter into a greased 8 inch (20cm) round cake pan.

Bake for 50-60 minutes or until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.
