Banana Cranberry Cake
Ingredients:
2 eggs
½ cup cream cheese
1 cup brown sugar
¾ cup vegetable oil
1¾ cups plain flour
½ teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
3 mashed ripe bananas
½ cup chopped cranberries
Preheat oven to 350˚F (175˚C).
Beat eggs and cream cheese until well blended.Mix in brown sugar and oil until well combined.
In a sepaerate bowl sift together flour, cinnamon, baking soda, baking powder.
Add the dry ingredients gradually to the wet ingredients and stir until combined.
Add mashed bananas and cranberries and mix well.
Pour the cake batter into a greased 9 inch (23cm) round cake pan.
Bake for 45-50 minutes or until skewer comes out clean.
Leave in pan for 10 minutes before turning out onto a cooling rack.
