Banana Buttermilk Loaf

The addition of buttermilk to this recipe truly enhances the flavour. This is a great banana loaf recipe!



Ingredients:

1 cup mashed ripe bananas
½ cup of buttermilk
2 eggs, beaten
½ cup of vegetable oil
1½ cups of white sugar
2 cups of white flour
1 teaspoon of baking soda
½ teaspoon of salt


Preheat oven to 350˚F (175˚C).


In a large bowl mix together bananas, buttermilk, oil and eggs.

In a seperate bowl, sift together flour, baking soda, sugar and salt.

Add the dry ingredients gradually to the wet ingredients and stir until combined.

Pour the batter into a greased 8 x 4 inch (20 x 10cm) loaf pan.

Bake for 1 hour and 15 minutes or until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.
