Banana Apple Cake



2 golden apples, sliced
Liquid honey for drizzling on apples
4-5 mashed ripe bananas
½ cup sugar
¼ cup honey
2 eggs
¼ cup vegetable oil
1¾ cup plain flour
1 tablespoon baking powder
1 teaspoon cinnamon
¼ teaspoon salt


Preheat the oven at 400ºF (200ºC).

Arrange apple slices on a baking sheet and drizzle honey over them.

Bake them for 10-15 minutes until moist and tender.

Remove apple slices and lower oven heat to 350ºF (180ºC).

In a large bowl, add bananas with sugar until well combined.

Add honey, eggs and oil to banana mixture and beat until combined.

In seperate bowl, sift together flour, baking powder, cinnamon, salt.

Add the dry ingredients gradually to the wet ingredients and stir until combined.

Pour the cake batter into a greased 9 inch (23cm) round cake pan.

Arrange a layer of apple slices in an overlapping pattern.

Bake for 55-60 minutes or until skewer comes out clean.
