Banana and Walnut Cake


3 mashed ripe bananas
½ cup sugar
½ cup brown sugar
½ cup vegetable oil
2 eggs, beaten
½ cup sour cream
1 teaspoon pure vanilla extract
2 cups plain flour
1 teaspoon baking soda
½ teaspoon salt
½ cup coarsely chopped walnuts


Preheat oven to 350˚F (175˚C).

In a large bowl, mix bananas, sugar and brown sugar until well combined.

Add the oil, eggs, sour cream, vanilla extract and mix well.

In a separate bowl, sift flour, baking soda, salt and combine well.

Add the dry ingredients gradually to the wet ingredients and stir until well combined.

Fold in chopped walnuts to the cake batter.

Pour the batter into a greased 9 inch (23cm) round cake pan.

Bake for 50-55 minutes or until skewer comes out clean.

Leave in pan for 10 minutes before turning out onto a cooling rack.
