Banana and Date Cake


Ingredients:

3 mashed ripe bananas
2 eggs
½ cup brown sugar
1 teaspoon cinnamon
½ teaspoon nutmeg
½ cup vegetable oil
1 teaspoon vanilla extract
1½ cup plain flour
1¼ teaspoons baking powder
¾ teaspoon baking soda
¼ teaspoon salt
¼ cup finely chopped dates

 

Preheat oven to 350˚F (175˚C).


In a large bowl mix together bananas, eggs, brown sugar, cinnamon, nutmeg, vegetable oil and vanilla extract until well combined.

In a seperate bowl, sift together flour, baking powder, baking soda and salt.

Add the dry ingredients gradually to the wet ingredients and stir until well combined.

Fold in the chopped dates to the cake batter.

Pour the batter into a greased 9 inch (23cm) round cake pan.

Bake for 45-50 minutes or until skewer comes out clean.

Leave in tin for 10 minutes before turning out onto a cooling rack.
