What makes a good Banana Cake?
From my experience, using well ripened bananas is the key to a good banana cake. The riper the banana, the denser and more pronounced the banana flavor of the cake. As you could well imagine, when bananas are used in baking, their warm, sweet scent infuses into the entire cake.

Where did Banana Cake originate?
There are many theories as to the origins of Banana Cake or Banana Bread (baked in a loaf tin), but according to many food historians banana cake/bread is a relatively recent phenomenon. The first record of banana bread baking appeared in Pillsbury’s Balanced Recipes (1933). Its popularity as a hearty bread escalated in the 1960s when home baking once again became the rage. Also during this period many cookbooks modified the standard Banana Bread recipe by introducing new ingredients such as fruits and nuts.

What are the health benefits of Banana Cake?
As with many baked foods, the more eggs, plain flour and shortening you use, the more fats, refined carbohydrates and cholesterol your cake will contain. But substituting some of these items with healthier ingredients will create a more nutritious dish. Bananas however are low in fat and are an excellent source of vitamin B6 as well as containing moderate amounts of potassium (helps lower blood pressure and promote bone health), magnesium (an essential mineral that is involved in many important metabolic functions in the body), and vitamin c.
